Introduction

Odia Alu Dum is an iconic curry from Odisha, revered both as a rustic home dish and an essential element of street food culture. Unlike mild potato curries, this dish features baby potatoes or cubed boiled potatoes slow-cooked in a rich, slow-roasted masala made with mustard oil, ginger, garlic, tomatoes, and ground spices. Deeply rooted in the culinary landscape of Cuttack and Bhubaneswar, it forms the famous Dahibara Alu Dum pairing while remaining a staple breakfast accompaniment to puri or kakara pitha. Commonly prepared during family gatherings, winter mornings, and festive celebrations, Alu Dum delivers a fiery, tangy, and deeply satisfying flavor profile. The velvety potatoes absorb the gravy's sharp mustard aroma and complex spices, making it a beloved symbol of Odia comfort food.
